Introduction

This roast chicken uses garlic, paprika, black pepper, and high-heat roasting to create a flavorful centerpiece without relying on added salt.

Ingredients

  • 1 whole chicken
  • 4 cloves garlic, minced
  • 2 teaspoons paprika
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lemon, quartered
  • Fresh herbs, such as thyme or rosemary

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry and rub it with olive oil, garlic, paprika, and black pepper.
  3. Place the lemon and herbs inside the cavity, then roast until the thickest part reaches 165°F (74°C).
  4. Rest the chicken for 15 minutes before carving.
